Tofu, Avocado, and Green Salad Meal

Lean and Green Salad

  • 1/2 cup romaine leaves, chopped
  • 1/2 cup kale leaves, chopped
  • 5 cherry tomatoes, diced
  • a handful of baby carrots, chopped
  • 1 english cucumber, diced
  • 1 Tbs olive oil
  • 1 Tbs balsamic vinegar
  • 1/4 tsp salt

Directions

  1. Chop veggies
  2. Drizzle with oil, vinegar, and salt

Sweet Avocado

  • 1/4 avocado
  • 1 tsp agave nectar
  • 1 Tbs pumpkin seeds

Directions

  1. Cut avocado, put remainder in fridge
  2. Top with pumpkin seeds
  3. Drizzle with agave

Sweet and Salty Tofu

  • 1 pkg extra firm tofu, diced
  • 2 Tbs olive oil
  • 2 Tbs soy sauce
  • 1 tsp minced ginger
  • 1/4 tsp garlic salt
  • 1 Tbs agave nectar

Directions

  1. Bake tofu at 300 degrees F for 20 min
  2. Sautee tofu in olive oil 2 min
  3. Add soy sauce, ginger, and salt
  4. Sautee 5 min
  5. Add agave
  6. Sautee until brown and firm
