Chia Pudding

Ch-ch-ch-chia! Do you remember those silly little chia planters? If you were a 90s kid, you probably saw one of those hedgehog-shaped planters that would grow little chia sprouts out of the back so that it looked like the plant was the hedgehog's spikes. So silly. 

Anyways, those little seeds actually are packed with a lot of health benefits. These tiny seeds are packed with healthy omega-3 fatty acids, carbs, protein, fiber, antioxidants, and calcium. The omega-3s are great for your hair, skin, and nails. Also, they have been shown to improve weight loss because they expand in your tummy when you eat them, making you feel more full (i.e. eat less calories). 

I like to add chia seeds to things like protein pancakes, smoothies, yogurt, and almond milk (to make chia pudding)!

This chia pudding recipe is a super quick breakfast idea that you can actually make a couple days in advance and just keep in the fridge. 

Ingredients:

  • 1/2 cup almond milk
  • 1 tsp vanilla extract
  • 3 tsp chia seeds
  • 2 tsp honey
  • You could even add a pinch of vanilla protein powder if you wanted to!

Directions:

  1. Combine all ingredients in a mason jar, stir well, and close the lid
  2. Refrigerate overnight (the mixture will thicken)
