Cinnamon Swirl Protein Muffins

This is my new favorite snack. As a lot of you know, I'm working on building muscle and leaning out right now. That means, I am very strict with my diet -- lots of protein, limited carbs. These muffins taste amazing and I don't have to count them as a cheat!

Makes 9 muffins

Ingredients:

  • 2 scoops Cellucor COR-Performance Series Whey Protein (Cinnamon Swirl flavor) <-- Use code SSE for 25% off!
  • 1 cup quick oats
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp salt
  • 1 tsp stevia
  • 2 tsp vanilla extract
  • 2 eggs
  • ~1/2 cup unsweetened almond milk (add in slowly)
  • Pam non-stick baking spray

Directions:

  1. Preheat the oven to 350 degrees
  2. Coat muffin pan with Pam
  3. Mix together dry ingredients
  4. Add in wet ingredients and stir thoroughly
  5. Pour about 2 heaping tablespoons into each muffin section of the pan
  6. Bake for about 15-20 minutes (edges will brown and tops will firm up)
