Giant Green Salad with Tempeh

giant green saladIngredients:

  • 2 cups of baby kale
  • 1 cup of lettuce
  • 1 English (small) cucumber, diced
  • 1/2 cup sugar snap peas
  • 1 cup broccoli
  • 1/2 cup cooked tempeh (cooking directions below)
  • 1 Tbs olive oil
  • 1 clove garlic
  • pinch of salt
  • 2 Tbs hummus (I used Sabra Roasted Pine Nut)

Directions:

  • crumble 1/2 package tempeh and place in pan
  • sautee with olive oil, garlic, and salt until browned (~10min)
  • rinse and chop veggies, place in large bowl
  • top with tempeh and hummus
