Healthy Super Bowl Snack: Quinoa and Spinach Stuffed Baby Portobellos

If you are a health nut looking for something yummy AND clean to bring to your Super Bowl party, I've got an idea for you!

Quinoa and Spinach Stuffed Baby Portobellos

Ingredients:

  • 2 packs (about 20 mushrooms total) of baby bellas
  • 2 cups cooked quinoa
  • 3 cups spinach
  • 4 garlic cloves, minced
  • 4oz sundried tomatoes
  • sea salt
  • olive oil
  • 1/4 cup fresh sweet basil, chopped
  • 2 tablespoons lemon juice
  • Parmesan cheese

Directions:

  1. Cook quinoa according to instructions
  2. Preheat oven 375 degrees
  3. Remove stems from mushrooms, creating little mushroom bowls
  4. Drizzle mushrooms with olive oil and roast in oven for 15 min
  5. Sautee spinach, sundried tomatoes, salt, basil, lemon juice, and garlic in olive oil
  6. Combine cooked spinach mixture with quinoa in a food processor and blend
  7. Add about 1/4 cup cheese to mixture and continue blending
  8. Remove mushrooms from oven and add a spoonful of quinoa mixture into the bowl of each mushroom
  9. Roast for another 20 minutes
  10. Remove from oven and drizzle with a little more cheese
