Raw Vegan Bridal Shower

hannah's showerYesterday was my best friend's bridal shower. Hannah is almost entirely raw vegan, so we (the other bridesmaids and I) made her shower almost entirely raw (the pita chips were the only non-raw food). You would think that this wouldn't be difficult for me to do, because I am vegan myself, but it really was a challenge to think of things to make. What kind of snacks/desserts can be made without cooking anything above like 100 degrees F? Thanks to Pinterest, we came up with some good ideas that we could raw-veganize. I made cucumber pesto rolls, a huge fruit salad, and zucchini avocado boats. If you make any of this stuff, make the cucumber pesto rolls. Those were a huge hit! One of the other bridesmaids made truffles, chocolate dipped strawberries, and "cheese"cake pops-- awesome, right? I'll try to get those recipes from her.

The food was surprisingly good! One of Hannah's uncles (who came to help set up) asked his wife to make sure she got the recipe for my cucumber rolls-- non-vegan approval always feels so good!

Here are my recipes:

Fruit Salad

Ingredients:

  • Pears, apples, berries, plums, watermelon, grapes

Directions:

  1. Chop fruit then place in bowl :)

Zucchini Avocado Boats

Ingredients:

  • 4 large zucchini
  • 2 large avocado
  • 1 lemon or lime
  • Salt to taste
  • A bunch of cherry tomatos
  • Toothpicks

Directions:

  1. Chop zucchini into pickle-like shapes
  2. Hollow out a little boat with a spoon for the dollop of avocado
  3. Blend avocado with lemon and salt then place a dollop in each boat, remainder of avocado can go in center of dish
  4. Place a tomato onto each boat with a toothpick

Cucumber Pesto Rolls

Ingredients:

  • 12 small cucumbers
  • 8 small garlic cloves
  • 1 cup pumpkin seeds
  • 1/4 cup olive oil
  • Juice from 1/2 lemon
  • Pinch of salt
  • 3/4 cup fresh basil
  • 1/3 cup sun dried tomatoes

Directions:

  1. Slice cucumber lengthwise with cheese slicer (it was on the side of my cheese grater)
  2. Place garlic in food processor, blend
  3. Add pumpkin seeds, olive oil, lemon, and salt then blend
  4. Add basil and sun dried tomatoes, blend until pesto consistency
  5. Spread pesto onto each cucumber slice, roll, and stick a toothpick through to hold it all together
