Sweet and Spicy Oatmeal Protein Bars

Ingredients:

  • 1 cup of oats
  • 1 3/4 cup water or almond milk
  • 1/3 cup diced walnuts
  • 1/3 cup diced almonds
  • 1/3 cup diced pumpkin seeds
  • 1 scoop vanilla protein (I used Perfect Fit)
  • 1/3 cup dried cranberries (unsweetened)
  • 1/3 cup dried and pitted dates, chopped
  • 1 tbs ground flax
  • 1 tbs cinnamon
  • 3/4 tsp ground cloves
  • 3/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 2 tbs coconut oil
  • 3 tbs maple syrup
  • 1 tsp vanilla extract
  • 2 tbs agave nectar

Directions:

  1. Preheat oven 350 degrees F
  2. Boil water or almond milk then pour into oats in mixing bowl
  3. Mix nuts in with oatmeal then spread flat onto greased baking pan
  4. Bake 15 min
  5. While the oats are toasting, mix flax, protein, cinnamon, cloves, nutmeg, salt, cranberries, and dates until the dried fruit is evenly coated
  6. In a saucepan, combine oil, syrup, and vanilla
  7. Heat for about 2-3 min on medium
  8. Once the oats are toasted, remove from oven and mix with spices and dried fruit
  9. Stir in the liquid mixture
  10. Spread mix into a 7x11 baking pan
  11. Press down with back of spoon to remove air pockets
  12. Turn down oven to 300 and bake for about 20 min, until golden brown and firm
  13. Remove from oven and let it cool/harden, can put in fridge if you want
