This power bowl recipe is close to the easiest thing on the planet to cook. One of my dearest friends (Tara) made this for Matt and I one time when we came over to her apartment in Brooklyn. I randomly started craving it this week, and texted her for the recipe. It's so simple and so good. Let me know if you try it!

This recipe should serve 2

Ingredients:

  • 1 large sweet potato, thinly sliced
  • 1 can of chickpeas
  • 2 cups of baby kale
  • Olive oil (or spray butter, if you're trying to conserve fat)
  • Salt/Pepper
  • Fresh Rosemary
  • Minced Garlic
  • Cayenne pepper

Directions

  1. Preheat oven to 425 degrees 
  2. Toss all ingredients (separately) in olive oil (or spray butter), garlic, and salt & pepper
  3. Separate ingredients on a large baking sheet
  4. Top all with rosemary
  5. Top chickpeas with just a pinch of cayenne
  6. Place sheet in oven
  7. Mix/toss kale after 5 minutes, and again after 10 minutes
  8. Remove kale after 15 minutes total, mix/toss chickpeas and sweet potatoes
  9. Remove chickpeas and sweet potatoes after 30 minutes total
