Try It Tuesday: Tofu Noodles

tofu noodles Truthfully, these frightened me. Tofu pasta sounds pretty icky. How would you cook tofu noodles to make them the right taste and texture? But, I am trying to reduce my starchy carb intake (especially after lunch). I've looked at these a number of times at the grocery store, picked them up to inspect them and plopped them right back down on the refrigerated shelf. Finally, I tried them out and they were not so bad after all!

Ingredients:

  • 1 pkg Tofu Shirataki
  • 1 1/2 cup chopped veggies of your choice (I chose broccoli, carrots, and asparagus)
  • 3 tsp vegan cream cheese
  • 1 clove garlic (minced)
  • 2 tsp EVOO
  • Vegan parmesan
  • Salt and pepper

Directions:

  1. Begin to sauté veggies with olive oil, salt, pepper, and garlic (again, you could use any veggies here: broccoli, peppers, zucchini, asparagus, carrots, etc.) 
  2. Drain and rinse noodles
  3. Parboil noodles 2-3 min (this will get rid of the weird tofu smell)
  4. Drain and dry noodles w/ paper towel
  5. Mix noodles with veggies and cream cheese over medium heat on stove
  6. Add parmesan, salt, and pepper to taste
