If you, like me, felt betrayed when you found out that your beloved candy corn had animal products in it, you will LOVE me for this. These little kernels are extra delicious-- better than their milk/butter counterparts. I made these will all organic ingredients that I just so happened to have in my pantry :) Joyous day! - 1 cup sugar
- 2/3 cup agave nectar (could use honey instead)
- 5 tablespoons Earth Balance (vegan margarine)
- 1 teaspoon vanilla extract
- 3 cups powdered sugar
- a pinch of salt
- red and yellow food coloring
In a large saucepan, bring the sugar, agave, Earth Balance, & vanilla to a light boil over high heat.
Reduce the heat to medium and boil the mixture for 5 minutes, stirring occasionally.
After 5 minutes, remove from heat. Be very cautious not to overheat. Overheating will make your dough hard and useless.
Sift the powdered sugar and salt into pan and mix well. Let the mixture stand until slightly warm to touch, about 20 minutes. Knead until smooth, being careful not to burn yourself on the dough (I did this).
Prepare a surface of wax paper. Divide the dough into 3 equal pieces.
Add several drops of yellow food coloring to one piece of dough and knead food coloring into the dough until smooth and color is even. Repeat using red and yellow food coloring (for orange) with the second piece and leave the last piece white (mine looked more beige than white because of my organic sugar), but knead it until smooth.
Roll pieces into ropes. I split them up because it made the rolling process more manageable.
Using sharp knife, cut the ropes into triangles.
Smooth out the edges with your fingers and let cool/harden.
