Fall is the best, in my opinion. I freaking love it. Seasonal recipes for fall are superior to other seasonal recipes. Here's one of my new faves. It's especially great because it requires little effort to make a sharable portion for your next fall party or holiday gathering.
This power bowl recipe is close to the easiest thing on the planet to cook. One of my dearest friends (Tara) made this for Matt and I one time when we came over to her apartment in Brooklyn. As a vegetarian, it can be hard to get a lot of protein in. I've actually changed up my macros so that carbs take up a significantly higher percentage, but I still need some protein to keep building muscle. And that's where eggs come in. I eat a lot of eggs, egg whites specifically (to conserve fat for cheeses, my guilty pleasure, and nuts).
