homestyle cookingI found a clean vegan BBQ sauce at HEB the other day that was made with agave nectar instead of sugar and obviously, I had to try it! It was amazing. This is a healthy, hearty, and delicious meal!


  • 2 cups Fresh green beans
  • 1 Sweet potato
  • 1 pkg Extra firm tofu
  • 1/4 cup Clean BBQ sauce
  • 2 T Olive oil
  • 1 T Balsamic vinegar
  • Sprinkle of sweet basil
  • Pinch of salt

Directions for sweet potatoes:

  1. Preheat oven 400 degrees
  2. Wash/scrub potato
  3. Pierce several times with a fork
  4. Place potato on a baking sheet lined with foil
  5. Bake for about 45 minutes, or until tender
  6. Cut in half and then slice down middle (salt optional)

Directions for tofu:

  1. As oven is preheating for sweet potato (before it reaches 400) bake diced tofu on baking sheet so that some of the water comes out
  2. Remove from oven and place in pan
  3. Add BBQ sauce (and pepper of you like)
  4. Sautee for about 20 minutes, or until tofu firms up and is completely coated with sauce

Directions for green beans:

  1. Boil water in pot
  2. Add green beans and boil until tender
  3. Strain water out and let cool then place in refrigerator
  4. Once all the rest of your food is done, remove from fridge and add olive oil, vinegar, and sweet basil
