Creamy Avocado Pasta
















Creamy, thick, and rich with lots of garlic flavour and a hint of lemon. Matt and I had this the other day.  It's delicious and different from our usual pasta dishes. The avocado works wonderfully in this recipe to create a sauce so creamy and thick, you will think there is cream hiding in there.

  • 1 medium sized ripe Avocado, pitted
  • 1/2 lemon, juiced + lemon zest to garnish
  • 2-3 garlic cloves
  • 1/2 tsp salt, or to taste
  • 1/4 cup Fresh Basil
  • 4 tbsp extra virgin olive oil
  • 4 servings pasta
  • Freshly ground black pepper, to taste
  • A small head of broccoli
  • Half a head of cauliflower
  • 2 hand fulls of chopped carrots
  • 3/4 cup spinach
So you've got 3 things going on at once:
1. Boil water for pasta
     a. Pour in pasta, cook to desired texture
     b. Rinse and strain
2. Heat 2 tsp oil in large pan
     a. Place broccoli, cauliflower, and carrrots in pan, saute on medium until soft (add some salt and garlic if you'd like)
3. Put garlic cloves, lemon juice, and 2 tsp olive oil in food processor
     a. Process until smooth
     b. Add pitted and skinned avocado, basil, spinach, and salt, process until smooth and creamy
When all of this is done:
1. Pour sauce on pasta and mix
2. Stir in veggies
3. If you'd like, you can garnish with lemon zest and black pepper
