Low-Carb Cauliflower Pizza Crust

  • 1/2 head cauliflower
  • 1 egg
  • 1/2 cup shredded mozzarella cheese
  • 1 1/2 tsp dried sweet basil leaves
  • 1/2 tsp oregano
  • 1 tsp salt
  • 1 tbsp minced garlic

Toppings I used:

  • Organic pasta sauce
  • 4 oz cooked tempeh (I just sauteed it with olive oil, garlic, basil, and mushrooms)
  • spinach
  • 1 tomato
  • pine nuts
  • fresh sweet basil


  1. Preheat oven to 375 degrees
  2. Line baking sheet with foil
  3. Coat foil with non-stick spray
  4. Chop cauliflower and mince in a food processor (until it becomes a rice- or mashed potato-like texture)
  5. Steam cauliflower over boiling water for about 20 minutes (if you're in a time crunch, simply microwave cauliflower for 8 minutes)
  6. In a medium mixing bowl, beat egg and then add in everything but the cauliflower
  7. Mix in cauliflower
  8. Pour the mixture onto baking sheet and flatten out with the back of a spoon (try to make it circular, like a pizza)
  9. Bake for 18 minutes
  10. Top with cooked chicken breast/cooked tempeh, sliced tomatoes, mushrooms, spinach, fresh basil, pine nuts, and more mozzarella (or whatever toppings you want)
  11. Bake for another 5-10 minutes (until cheese is melted)
