As a vegetarian, it can be hard to get a lot of protein in. I've actually changed up my macros so that carbs take up a significantly higher percentage, but I still need some protein to keep building muscle. And that's where eggs come in. I eat a lot of eggs, egg whites specifically (to conserve fat for cheeses, my guilty pleasure, and nuts).

I take protein powder too, but I try to limit myself to no more than 2 scoops a day. My main protein sources are: protein powder, egg whites, tempeh, tofu, and beans. 

The recipe below is a great, protein- and vitamin-rich option for breakfast or really any other meal. I'm against sequestering eggs to only being a breakfast food. 


  • 3/4 cup egg whites
  • 1/2 cup spinach
  • 1/2 cup chopped bell peppers
  • 1/4 cup chopped broccoli 
  • 1/3 cup mild cheddar cheese 
  • Salt to taste


  • Heat pan + grease with calorie-free Pam butter spray
  • Pour in egg whites
  • Add veggies
  • Add cheese and salt
  • Scramble using a plastic or rubber spatula

Super simple and protein-packed!
