Strawberry Protein Blondies


I've been trying to find creative, non-chicken ways to add more protein to my diet. Since I started IIFYM a couple weeks ago, I have realized that I really don't get a lot of protein in my diet. Since I was vegan/vegetarian for 15 years, I still am not crazy about meat -- the texture and taste is still kind of weird to me. Thank goodness for protein powder, right?

This is quite possibly my favorite protein powder recipe yet! I think the peanut butter addition really helps to create a more creamy (and less styrofoamy) texture. 


  • 1/2 cup peanut butter (or almond butter)
  • 3 tbs stevia
  • 3/4 cup strawberry whey protein powder (I used Gold Standard 100% Whey)
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup egg whites
  • 1/2-3/4 cup almond milk (add slowly)
  • 1 tsp vanilla extract


  1. Preheat the oven to 350F
  2. Heat the peanut butter in the microwave for 15 seconds
  3. Mix peanut butter with stevia
  4. Add everything but the milk
  5. Slowly add milk to create a cake batter like texture
  6. Pour mix into a greased 8x8 pan (I greased mine with coconut oil spray)
  7. Bake for 21 minutes
