Summer is coming to an end, and I'm trying to appreciate summery things while they still last. The weather in NYC is plenty hot, so I still think it's a good time for refreshing, summery foods.
This side salad is one of my summer favorites. It's surprisingly flavorful for something so low cal. The sweet basil makes this dish, so you really need to buy fresh.

- 3 oz cherry tomato
- 4 oz cucumber
- 2.6 oz fresh green beans
- 1/4 cup diced onion
- 1/2 tbsp olive oil
- 1 tbsp champagne wine vinegar
- 4 leaves of fresh basil
- Salt to taste
