Sweet Potato Bake



  • 4 sweet potatoes
  • 1 cup butter
  • 1/2 tsp salt
  • 1/4 cup sugar
  • 2 eggs
  • 1/3 cup vanilla almond milk
  • 1/2 cup chopped pecans
  • 1/2 cup whole wheat flour
  • 1 cup brown sugar


  1. Preheat oven 350 degrees
  2. Wash and dice potatoes so that you can submerge all of them into a large pot of water.
  3. Bring water to a boil over medium-high heat, boil until potatoes are tender (about 30 min)
  4. Remove potatoes from water (I used tongs to do this) and set aside to cool
  5. Once cooled, remove skins from potatoes
  6. Mash potatoes with a fork in a large bowl
  7. Mix in 1/2 cup butter
  8. Add sugar and salt, mix
  9. Whisk eggs in separate bowl and them mix into potatoes
  10. Add in milk a little bit at a time (you may not need all of it), you want a cake batter texture
  11. Spread potatoes evenly in a 9x13 glass pan
  12. Melt 1/2 cup butter
  13. Mix butter with brown sugar, nuts, and flour
  14. Sprinkle sugar mixture over the top of the potatoes
  15. Bake until topping is browned and crispy (about 35-40 minutes)
  16. Serve hot
