Tempeh Nachos

These are delicious and great for a game day meal/snack.

Ingredients: 1 Packet of Tempeh, crumbled Tortilla Chips One bag Daiya Cheese (made from cassava and arrowroot.  Contains no animal products or soy, casein, lactose, whey, wheat, barley, gluten or nuts.) 1 15 oz can Vegetarian Refried Beans (contain no pork) A handful of Spinach, sliced into strips A handful of Cherry Tomatoes, sliced in fourths 1 Avocado, peeled and diced 2 tablespoon olive oil 1 tsp paprika 1/2 tsp onion powder 1/4 tsp garlic powder

Directions: 1. In a large mixing bowl, combine all ingredients together except for the tempeh and additional tbsp oil 2. Add the crumbled tempeh and mix well. 3. Heat the oil in a frying pan and then cook the faux meat mixture on medium heat for five minutes, stirring often. 4. Taste a small piece to see if additional onion powder, paprika, or garlic powder should be added 5. Heat beans in small pot 6. Put desired amount chips on plate and sprinkle Daiya cheese generously (I usually do this in layers so that the bottom chips have cheese on them too) 7. Microwave for 1 min to melt cheese 8. Cover cheesy chips with beans, spinach, tomatoes, avocado, and tempeh
