Try It Tuesday: Cactus Fries

  • 2 cactus leaves
  • 1 cup vegan breadcrumbs
  • 2 Ener-G "eggs"
  • salt and pepper to taste


  1. Preheat oven 375 degrees F
  2. Rinse cactus under cold water (you may want to wear gloves to protect from thorns)
  3. Trim the edges off the cactus (like you were trimming the crust off a PBJ)
  4. Remove the stem
  5. Run your knife across the surface of each leaf to remove all the thorns
  6. Rinse in cold water and do a final check for thorns
  7. Slice the cactus into strips, then cut those in half
  8. In a shallow bowl, pour 1 cup breadcrumbs
  9. In another shallow bowl, prepare 2 eggs worth of Ener-G Egg Replacer
  10. Spray a cookie sheet with cooking oil
  11. Dip each cactus slice in "eggs" then in breadcrumbs, salt and place on cookie sheet
  12. Place cookie sheet in oven and bake for about 10 minutes
  13. Flip fries over with a spatula and bake for another 10 min

Maybe try these fries with avocado dip or ketchup.
