I haven't done a "What I Ate Wednesday" in a while, and I feel like my regular eating routine has changed quite a bit. I'm a vegetarian, and I'm trying to do a little bit of a cut (fat loss) before I start serious marathon training in June. I'm currently shooting for 45% Carbs, 35% Protein, and 20% Fat.
Cheese is still my vice. Maybe one day, I'll be able to cut it out again. But right now it makes me happy, so it's staying for the time being.
I work remotely for my job in NYC, so my hours are 7am-4pm. When I wake up at 6, I don't usually want to have a full-on breakfast. I just need something to get my brain going. This morning, I had ezekiel toast with vegan butter and jelly. I take gummy vitamins every morning. It's the only way I can con myself into eating vitamins.
I got hungry again around 9am, so I whipped up egg whites with cheddar cheese. Matt laughs at me when I eat this because he thinks it's silly that I don't eat yolks but I add cheese. My response, of course, is that I don't eat the yolks because I want to eat cheese. Cheese always trumps yolks. And so does peanut butter. I'm just choosing my fats wisely.
At 11am, I had a quick snack -- artichoke and spinach hummus with carrots.
Something that I absolutely love about working from home is that I can actually cook lunch instead of standing in line for 30 minutes to end up with a mediocre $11 sandwich. Today, I grilled some veggies and tempeh on my stovetop.
At 3pm, I got hungry again and had yogurt with protein powder mixed in. I'm not a huge fan of this protein powder in the photo. This is the brand Matt likes. They didn't have FitMiss at GNC when we went the other day, so I've just been taking his.
I went for a 4.5 mile run after I signed off for work. Geez, it's so beautiful here. I ran around a nearby lake and had to stop a bunch of times to just stare at the lake with the Rockies behind it.
I was ravenous when I got home, so I had some post-run protein and a couple dates while I cooked dinner.
For dinner, I grilled a veggie burger. I like to keep it pretty simple with burgers. I used a whole wheat bun, added a little cheddar cheese, ketchup, pickles, and lettuce.
That's it! I'd say this is pretty representative of a normal day of food for me these days.
