Winter Kale Salad


I have been trying to get this recipe from a friend of a friend for almost a year. Someone brought this [delicious] salad to the New Year's party Matt and I went to, and I've been dying to make it since. I finally decided I was just going to experiment and try to make it on my own. It's probably not exactly the same, but I think it turned out really good!


  • 1 bunch fresh kale
  • 1 ripe avocado
  • Seeds from 3/4 of a pomegranate
  • 2 tsp lemon juice
  • 1 tbsp olive oil
  • salt and pepper to taste


  1. Wash kale and remove leaves from stem, place leaves in mixing bowl
  2. Harvest seeds from pomegranate (Do this inside of a large bowl of water to keep is from covering your kitchen with magenta liquid)
  3. Half avocado, remove seed/skin, then mash in another bowl
  4. Mix avocado in with kale, then add pomegranate seeds, lemon juice, olive oil, and salt and pepper
  5. Mix until leaves are coated
